Holiday Parties Galore

A great thing about being a part of different organizations in college is the excuse to go to multiple holiday parties!

DZ always has a holiday party with ATO the week before finals, and this year it was a ton of fun! I love getting dressed up in ugly sweaters and Christmas gear and just looking silly.

Here’s my Little and my Little Little! I got my Christmas bear sweatshirt at Love Saves the Day in New Hope, PA. It’s an 80’s original and super sparkly. I picked up a santa hat headband from Target, and wore leggings and some red lipstick.

I also hosted the Writing Center tutor party at my apartment. Of course I needed to decorate so I ran to Wegman’s and picked up a tiny christmas tree, and outfitted it with a bow and a felt bucket from Target. I also got some other sparkly and festive decorations!

Here are a couple recipes from the night! I made Holiday Mocktails, and one of the other tutors, Iana, made Spinach and Feta Quinoa Bites; both were a big hit.

Holiday Shirley Temple Recipe

1/4 cup orange juice, 3/4 cup sprite, 2 tbsp grenadine, garnish of choice

pour the orange juice and sprite into a glass, and then pour in the grenadine, letting it sink to the bottom. I recommend adding a straw so you can stir the drink together once you’ve admired the cool effect of the grenadine sinking to the bottom!

Spinach and Feta Quinoa Bites Recipe

1 cup uncooked quinoa, 2 cups chicken broth or water, 1 teaspoon olive oil, 4 big handfuls of fresh spinach (about 1 cup cooked), 1/2 medium onion finely chopped, 1/8 teaspoon garlic powder, 1/4 teaspoon dried oregano, 4 oz crumbled feta, pinch of salt and pepper, 3 eggs lightly beaten

1. Preheat oven to 350 degrees

2. Cook quinoa according to directions, let cool

3. In a large skillet, heat olive oil over medium heat. Saute onion until softened. Add spinach in batches until completely wilted

4. In a large bowl, combine quinoa, spinach, garlic powder, oregano, feta, sal and pepper. Add egg to quinoa mixture and incorporate

5. Spray mini muffin tin with nonstick spray. Spoon quinoa mixture into tin, gently patting it down

6. Bake at 350 degrees for 18-20 minutes. Let cool for 5 minutes then remove

Makes about 36 quinoa bites

The last party I went to was for my dance team! We do a secret santa exchange every year, and this year, one of our team members cooked us all a beautiful meal. We had chicken and pasta, salad with multiple types of carrots, and fresh berries with homemade whipped cream for dessert! As if that wasn’t enough, she sent all of us home with an adorable rice krispy treat snowman!

My co-captain was my secret santa and she got me three amazing pairs of socks and nail polish! Here is the snowman treat; isn’t it adorable!?
