New Year’s Eve Dinner

Before I begin this post, I would just like to admit that I have never cooked chicken before. I’m not a huge fan of cooking and I’m not a huge foodie (unless its covered in chocolate). So, here, on December 31st, 2014, I will chronicle my first chicken cooking experience.

But to start, I finally made something I have been wanting to try for forever: Mac and Cheese Grilled Cheese. Basically you make Mac and Cheese, and then put it with another piece of cheese to make a sandwich. It is a sandwich of awesome.

The Recipe:

Baked Chicken with Onions, Potatoes, Garlic and Thyme 

Serves 4 but I made it for 2; Takes 1 Hour

Ingredients: 1 whole chicken cut into 8 pieces, 1 lb white new potatoes halved, 1 large red onion cut into eighths, 1 head of garlic cloves separated and unpeeled, 6 sprigs thyme, 1 lemon quartered, 1/4 cup extra virgin olive oil, 2 tablespoons balsamic vinegar, salt and pepper

*I used the same amount of everything except chicken. I only put in two breasts and two legs and it turned out fine*

Directions: Preheat oven to 450 degrees. Place chicken, potatoes, onion, garlic, lemon and thyme in a 12 by 16 inch roasting pan. Whisk together olive oil and vinegar and drizzle over chicken and veggies. Toss to combine and season with salt and pepper. Turn chicken skin side up. Cook until browned, about 50 minutes.

This whole thing actually turned out a lot better than I thought it would! My mom laughed at me while I was touching the chicken, but it ended up being very juicy and pretty good!

New Year’s Glamour

The boyfriend and I decided to forgo the partying this New Year’s and have a fancy dinner at home! I’ve been setting up all day, so I can start cooking while he’s on his way from work.

I got a whole bunch of fancy table decorations at Target and Party City, and a lot of it on clearance.

The plates, placemats, and metallic shred are from Party City. I didn’t want to get too cheesy with the New Year’s decor so I opted for a kind of Kate Spade inspired color palette instead. The glassware, sunglasses, and the Nate Berkus tray are from Target, which I got on clearance.

These cupcakes from Wegmans added the perfect touch of sweetness to the table. And a little (or a lot) of champagne never hurt anybody!

I turned the napkins into bows by pinching them in the middle and tying them with a bit of ribbon. To make it a little more glamorous, I made napkin rings of card stock that I had, which matched my color scheme perfectly. I wrote out 2015 in an Art Deco style and added some glitter glue for sparkle.

Now it’s time to get ready and get cooking before Jack gets here!

 

Target Style

Just a short post for today because I’ve been running around preparing for New Year’s Eve! The boyfriend and I aren’t big partiers so we decided to make a fancy dinner and tablescape (which I will post about tomorrow) and watch the countdown in our jammies.

I popped into Target to get some decorations, and even though it’s not even New Years yet, I found the cutest Valentine themed mugs!

I got one for Jack and one for myself.

His says, “I Woof You” with a puppy, and mine says, “You Are Magical” with a unicorn! They also have ones with cats and coffee beans.

We made some Teavana Youthberry Tea and snuggled on the couch. I really do woof him!

The mugs are not listed on the Target website, but they also have cute travel mugs with sweater cozies!
